All three of these 2025 Provenant maple syrups are made using the traditional open bucket collection method, and slow-boiled to bring out the richest flavour.
Open bucket collection is a time-honored method that allows sap to be gathered directly on the tree, imparting traditional character and a more complex flavour than modern tubing systems. This artisanal approach is rarely used in commercial production today, making each bottle a rare and authentic treat.
Slow-boiled maple syrup is made by gently simmering maple sap for hours, allowing flavors to deepen naturally, in contrast to modern methods like reverse osmosis that pre-concentrate the sap and shorten the process.
